Governor's Mansion Peanut Butter Ice Cream Pie

I found this easy recipe for peanut butter ice cream pie in the Atlanta Journal-Constitution when I lived there in the late 80's/early 90's. The article had said it was the governor's absolute favorite dessert.Try it and you'll understand why!

INGREDIENTS:

  • 1 quart vanilla ice cream

  • 3/4 cup creamy peanut butter

  • 1 cup unsalted peanuts, chopped

  • 1 Tablespoon vanilla extract

  • 1 10-inch prepared graham cracker or chocolate crumb crust

  • Hot fudge sauce, whipped cream and candy as optional accompaniments

PREPARATION:

Combine ice cream, peanut butter, 1/2 cup peanuts and the vanilla in a bowl and mix well. Fold into prepared crust and sprinkle with remaining peanuts. Freeze until hard. Remove from freezer about 10 minutes before serving. Garnish with hot fudge sauce, whipped cream and candy if desired.
