Glazed Grilled Salmon
INGREDIENTS
¼ cup + 2 Tablespoons dark brown sugar
2 Tablespoons + 2 teaspoons Chinese hot mustard (do not substitute regular mustard)
2 Tablespoons soy sauce
2 teaspoons rice vinegar
4 7-8 oz. salmon steaks or fillets
PREPARATION
Combine sugar, mustard and soy in a medium bowl. Transfer 2 Tablespoons of mixture into a small bowl, mix in vinegar, then set aside.
Brush one side of salmon generously with half of glaze.
Place salmon, glazed side down, onto grill. Grill until slightly charred, about 2-4 minutes. Brush top side with remaining glaze. Turn over and grill until done to your liking, about 2-5 more minutes.
Before serving, drizzle reserved glaze over salmon. Serves 4.
